Oohs and Ahs in Burlingame: Sampling the cuisine at Hyatt Regency



BURLINGAME — On a recent visit to sample the culinary talents of Chef Herb Ng at the Hyatt Regency San Francisco Airport hotel in Burlingame, the “oohs and ahs” circulated around the table as we diners tasted the chef’s creative fare.

The point of the meal was very simple: to illustrate the idea that airport hotel food can, indeed, be quite good.

And good it was – in fact, I’d say great!
Of all the plates we tasted, my favorite was Ng’s Pan Seared Chilean Sea Bass, prepared with fresh-water rock shrimp, black forbidden rice and shellfish veloute.

This dish was everything I’ve always expected of sea bass, but especially its prized silken texture, which Ng’s careful hand made sure was there to appreciate.

In a later interview with Ng, the chef explained what went into his work on this particular dish:
“You know, a lot of times people tend to lose their focus and try to do too much. I always like to let the product speak for itself.”

Ng went on to stress that, for cooking the sea bass, “it was probably the most basic cooking technique: don’t overcook it, you don’t have to do much to it.”

“At the end of the day,” he said, “it’s really about knowing your product, getting it as fresh as possible, and let the product speak for itself.”

Of course, there are certain foods which require more time, he said, like short ribs, for example. But when simplicity is called for, simplicity is what you should aim for.

Ng, who has been at the Hyatt in Burlingame for almost five years, brings a rich background to his work. He graduated from the culinary arts program at San Francisco City College and has spent the better part of his career working in hotel industry cuisine, including Marriott.

Ng admitted that there is a “stigma” to hotel banquet food but, he said, “we try our best to always try and put that restaurant spin into all the catering that we do here. ” One thing that attracted Ng to Hyatt, he pointed out, “is their focus on food.”

The complete special sampling menu included these other dishes: A plated starter of sliced duck breast with caramelized butternut squash, toasted couscous and port wine gastrique.
Family-style main dishes included arugula, frisee salad with bosc pear, candied walnut, Point Reyes blue heirloom tomatoes, Hass avocado, creamy burrata cheese, basil oil, basil reduction, cider-brined organic chicken breast stuffed with forest mushrooms, brown rice, sun-dried cranberry dressing, herb-crusted beef tenderloin, scallop baby potatoes, sautéed spinach, red onion marmalade, pan-seared Chilean sea bass and, for dessert, chocolate mousse with roasted banana.

The next morning, I sampled the hotel’s Sunday Champagne Jazz Brunch, held under the spectacular atrium. There was so much variety to sample – from eggs and pancakes to Chinese – that I just didn’t know where to start!

The hotel also features a more informal menu at its Knuckles Historical Sports Bar, where one can watch the latest game on wide-screen TVs, but be prepared to put up with some of the noise you normally will find in a sports bar.

My room at the hotel was well-appointed and comfortable and looked out at the giant atrium.

Great Spaces In and Around the Hyatt Regency San Francisco Airport


While the Hyatt Regency San Francisco Airport boasts the most convenient hotel accommodations for meetings and events, the property is also surrounded by several intriguing off-site venues that are convenient options for those that want a little diversity in their agenda.

One of the hotel’s new favorite recommendations is the science museum CuriOdyssey, which is located only five minutes from the hotel in the natural setting of Coyote Point Recreation Area.

CuriOdyssey features stunning views of the San Francisco Bay as well as the city of San Francisco and is an ideal option for any event, including: weddings, company retreats, off-site meetings, cocktail receptions, b'nai mitzvah, family parties, special occasions and fundraising events.

The museum’s Redwood Hall is largely composed of rich, repurposed wood and the room features a unique, multi-tiered space that allows groups to occupy part of or the entire facility.  For evening events, guests have access to the beautiful gardens and CuriOdyssey’s main building, which houses a variety of fascinating interactive exhibits.

And…here’s one little tip:  with prior arrangement with the museum’s Wildlife Department, groups may opt to include an up close encounter with one of the many animal ambassadors.

“YAPPY HOURS” AT HYATT REGENCY SFO




 Hyatt Regency San Francisco Airport is barking about its on-going partnership with Canine Companions for Independence (CCI) Brunch by hosting a series of “Yappy Hours” and a specially-designated Sunday Brunch.  All of these events are designed to help educate the public about what CCI  is doing to assist people with disabilities as well as to raise funds for future companion placements.

Hosted by the hotel’s own resident Canine Companion puppy-in-training, “Oahu,” the series of “Yappy Hours” will feature doggie treats for our four-legged guests and fun social interaction   for human companions, ” as well as interaction with experts on such pet-related topics as raising a puppy for CCI.  The pet-friendly get togethers will be hosted at the hotel’s Poolside Pavilion and are scheduled for 5:00 – 6:30 p.m. Tuesday, October 23; Tuesday, October 31; and Tuesday, November 6.

As the grand finale to this series of educational celebrations, the hotel will host the special occasion Canine Companions for Independence Brunch, which is an extension of the features that guests already enjoy for the Bay Area’s most popular brunch buffet.  With a portion of the proceeds designated for CCI’s Veteran’s Initiative, the special jazz brunch is scheduled on Veteran’s Day, Sunday, November 11, 2012 and will feature a variety of seasonal favorites, including:
  • Seafood display with spiced peel and eat shrimp, New Zealand green lip mussels and oysters; hand rolled Maki sushi and house cured gravlox
  • Creative summer salads, including heirloom tomato and watermelon salad; artichoke, grilled peppers and roasted mushroom salad; and new potato salad with crispy prosciutto
  • A large variety of meat and fish stations as well as specialty entrée options such garlic rubbed slow roasted prime rib of beef; smoked paprika crusted pork loin; Bing cherry chipotle BBQ; ancho braised beef short ribs; grilled salmon with red onion marmalade and tropical fruit salsa; lemon-rosemary chicken with fire roasted peppers and tomatoes; and molasses glazed pork spare ribs on creamy cheese grits
  • Made-to-order omelets, blueberry pancakes and Eggs Benedict
  • Belgian-style waffles and cheese blintzes with warm maple syrup
  • Dessert station filled with a selection of cakes, pies, tarts, bread pudding, strawberry shortcake and seasonal fruits

On September 15, 2012, a team of Hyatt Regency San Francisco employees took to the coast to participate in an important statewide effort to keep our precious coast trash-free.

California Coastal Cleanup Day, an annual beach and inland waterway cleanup, is the state's largest volunteer event and removes approximately 1.2 million pounds of trash and recyclables from our beaches, lakes, and waterways each year.

Hyatt Treats Children To New Organic Menu Created By Chef Alice Waters



Hyatt today announced details of its new organic and seasonal children’s menu created exclusively for Hyatt by renowned food pioneer and chef, Alice Waters. The new menu, featuring a three-course organic meal, marks the first hotel project for Waters and complements Hyatt’s groundbreaking “For Kids By Kids” menu, providing children more nutritious, fresh and interactive offerings. The new children’s food and beverage offerings at Hyatt are grounded in the brand’s industry-leading philosophy Food. Thoughtfully Sourced. Carefully Served., promoting healthy people, a healthy planet and healthy communities, and will be offered in all full-service Hyatt hotels and resorts throughout the U.S. and the Caribbean.

Waters, known for her culinary philosophy that maintains cooking should be based on fresh, organic, and seasonal ingredients that are produced sustainably and locally, worked with Hyatt to develop a full organic meal offering including a salad, chicken entrée and a dessert.


“All children deserve to eat real food,” said Alice Waters. “I wanted to do a small, three course meal, within the context of Hyatt’s initiative, that could be sourced exclusively from organic farms across the country. Of course it’s about taste and ripeness and seasonality—but it’s bigger than that, too: it’s about supporting the people who are taking care of the land for our future generations.”


“As Alice Waters is a pioneer, we feel this aligns perfectly with Hyatt’s commitment to being a leader in our industry as it relates to the health of our youngest guests,” said Susan Santiago, vice president, food and beverage, Hyatt Hotels & Resorts, North America. “We’ve done extensive research and it shows that kids have a more sophisticated palate than ever, and so working with Alice is a natural fit.”


Alice Waters’ menu at Hyatt features:

* Romaine Lettuce Hearts, Carrot Curls and a Radish Rose with Lemon Vinaigrette for Dipping. “Contrary to prevailing beliefs, getting kids to eat vegetables is not difficult. We simply have to meet their most basic impulses: to eat something that is engaging and that tastes delicious,” said Waters. “The aliveness of textures and colors, as well as the ‘do-it-yourself’ nature of this salad, makes this universally appealing to kids.”

* Grilled Chicken with Pesto Sauce, Roasted Potatoes and Cherry Tomatoes. “This is a dish of simple grilled and roasted ingredients, served with a pesto sauce. The trick with something so straightforward is to be confident that the ingredients are the best that they can be.”

* Strawberry and Orange Slices served with a Sweet Juice in a Real Orange Cup. “The goal here is to appeal to kids’ imagination about ‘dessert,’ without feeding them unhealthy, sugary food,” said Waters. “A real orange cup filled with a luxurious amount of perfectly sliced ripe fruit feels special, and the juice is made with a touch of honey to sweeten it.”


To add another layer of fun to mealtime, Hyatt will launch a Flavor Journey online experience in September where kids and parents can learn more about organic foods, the “For Kids By Kids” menu and enjoy games and activities. Guests can use a QR code on the “For Kids By Kids” menu to link to the site.

The adjoining Grand Peninsula Foyer, with spectacular lighting from our 10-story atrium overhead, is the ideal spot for pre-dinner cocktails. The convenient location just off the main lobby and front desk makes this combined space easily accessible for all your guests.
Regency Ballroom and Foyer: For smaller, yet equally impressive gatherings, choose the regal Regency Ballroom. Utilize the entire venue for a casual reception with 400 guests or a seated dinner for 320. The attached foyer may also be added as a cocktail area.
 
Poolside Pavilion: Host an event any time of the year in this recently renovated Pavilion. With self contained air conditioning and heating, this tented venue makes every gathering unique and memorable. The Pavilion can accommodate groups including 220 for a formal banquet or 350 for a reception.
